Everyone wants to try my beer! But its not officially ready.

Graham Wheeler states you need a week in the bottle for every 10 gravity.

Certainly my strong ale which hit 1060 OG is very rough round the edges even after 3 weeks in vitro.

Now my mild that hit FG after less than 3 days was left for a DRest for 3 days then bottled 8 days ago. Could that possibly be anywhere near finished from a yeast perspective?

I'm not an expert but I always say if it is clear and it tastes good....Drink it. It may get better as it ages but that's half the fun, finsing out exactly when your beer reaches perfection. My last brew was nice after one week conditioning, after 4 weeks it was spot on. I have just tried a pint of another which has only been conditioning 2 days. It is clear as a bell, great initial taste, just a little too bitter on the after taste. I'm looking forward to having another sup tomorrow to see if it is any different.

It's ready to drink the day it finishes fermenting..........carbonating , clearing and maturing is just your own preference.

IMO it's worth trying a bottle at least every week. Some ales (not just wheat beers) seem to taste at their best after only a few days in the bottle.

I like tasting my beer eveb when I know it's not ready, so I can see the progress until it's might fine. For the first time, recently I made a beer which was ready for drinking 1 week after brewday. It tastes good after 1 week and fantastic after 2.

Drinking Green beer is a joy as you get to see how it develops, only problem is when its just right its gone

Garysmiff hit it on the head for me!. Though i love to drink low alch ales as soon as its done.

I often drink it too early, patience isn't my strong point. I find there's often a nasty 'lemonade top' taste to it and I'm always disappointed, only to find it's great just a few days later.

Low gravity malty beers tend to taste great soon after fermentation. Some hops take a while to mature before they taste good, other hops taste fantastic in a very small window post fermentation. It's all about experimenting and going by your own taste.
