Going for something malty ..hoppy.

Post by kevthebootboy » Wed Oct 05, 2011 9:54 pm

Just been having a playing about on beer engine, i was planning on using vienna and munich together to get a nice malty base and Lancssteve suggested making it nice and hoppy to, witch sounded good to me,

so came up with this to make a start with...

Fermentable Colour lb: oz Grams Ratio
Pale Malt 5 EBC 8 lbs. 13.0 oz 4000 grams 80%
Vienna Malt 7.5 EBC 1 lbs. 1.6 oz 500 grams 10%
Munich Malt 20 EBC 1 lbs. 1.6 oz 500 grams 10%

Hop Variety Type Alpha Time lb: oz grams Ratio
Pilgrim Whole 11.2 % 90 mins 0 lbs. 0.5 oz 15 grams 11.5%
Willamette Whole 5.5 % 90 mins 0 lbs. 0.5 oz 15 grams 11.5%
Pilgrim Whole 11.2 % 15 mins 0 lbs. 1.1 oz 30 grams 23.1%
Willamette Whole 5.5 % 15 mins 0 lbs. 1.1 oz 30 grams 23.1%
Pilgrim Whole 11.2 % 0 mins 0 lbs. 0.7 oz 20 grams 15.4%
Willamette Whole 5.5 % 0 mins 0 lbs. 0.7 oz 20 grams 15.4%

Final Volume: 25 Litres
Original Gravity: 1.047
Final Gravity: 1.011
Alcohol Content: 4.6% ABV
Total Liquor: 35.5 Litres
Mash Liquor: 12.5 Litres
Mash Efficiency: 78 %
Bitterness: 49.1477214591201 EBU
Colour: 11 EBC

how does that look, any advice would be grand.

you could always up the munich. I made one a while ago with around 70 percent munich, 15 pale, 10 aroma and 5 wheat. Used bobek to finish. Was great although muted the malt a little.

Cheers Dave,

yeah sounds good, I'll have a little play about with the recipe , I think if
I add abit more malt, and keep the hops the same it might even it out abit. So I might add abit of aromatic in there...

If it was my beer Kev, I'd up the Munich (as I love the stuff) and maybe the Vienna as well to 1kg each.
I'd drop some of the bittering hops but keep all the late ones to knock the IBU's back to around 35.

As I said, if it was mine, but its not, its yours :)

Cheers Spud,

Yeah not a bad idea, as they do need using up, I was going to keep the IBUs abit higher just because in the past a few of my beers that have had the IBUs equal or less then the OG, the beer has come out being abot sweeter then it should, but that could be down to all sorts of factors, just after abit more
bite in this one so to speak,

thanks for the advice bud :D

+1 to above - as much munich and vienna as you got then pad out malt bill with pale malt...

not sure how pilgrim are as late additions - willamette are great so I'd favour just pilgrim early and thenj maybe pilgrim + willamette or will only at 15 mins then just willamette at flameout. Willamette are lovely hops so wouldn't want to swamp them with high alpha pilgrim personally.

Looking good - that's top end of the aromatic range there - if you got more base and aromatic is in date then I'd think of halving the aromatic and saving some for a future brew - a little can go a long way (+ it's not cheap and excellent for Belgian beers rather than chucking it all in now...)

Ah ok, I don't know much about aromatic malt other then it adds malty taste and aroma, I've got some imperial malt I could use it there, half the aromatic and add some imperial?

What do you mean by top end aromatic malt, I'm intrigued :-k

Top end as in maximum recommended amount to use is 10% and generally recipe advice is that a little goes a long way
