just pulled 3 pints of a brew i did in dec.fg was 1.002 i primed with my normal qty of dme,so it should have been a dry taste but it,s quite sweet . looked at my log for this brew and all the temps and times are spot on. the only thing that,s different is,..... this was my first overnight mash, about 13hrs.if these are unfermentable sugar,s i am tasting should this have shown up as a higher fg reading. i have done 2 more over night,s since and both of these have gone down to about 1.003, but i havent tried these yet. any reason for this sweetness? btw late hops where halleteur and lubeski

Those fgs are extremely low...is your hydrometer accurate? - Have you checked it reads 1.000 in water at the appropriate temp (usually 20C for most hydros).

You are right that unfermentable sugars would have shown as a higher reading..

hydro is bang on . i think i have said this in a post some where before that ,since ive been doing overnight mashes my brews have gone down to these figures .before this on a normal 90 min mash they never went below 1.010

the overnight mash has caused more sugars to become fermentable and why you've a low FG, you've probably got a very thin beer on your hands atm, but i can't think why it'd be sweet, you'd expect it to taste dry with a little alcoholic harshness perhaps. only thing i can think of is either using too much crystal malt, or the priming solution hasn't fully fermented out yet. where are you storing it?

5 days in the warm then in the cold of the garage,it,s turned out to be a realy nice brew just a little to sweet for my palate but cus it went so low on the fg it came out at 6.7% instead of 4.65. ITHINK I,LL DROP THE HYDRO IN A SAMPLE AND SEE WHAT IT,S COMING OUT AT NOW.
no crystal was used only lager malt and pale malt

5 days probably isn't long enough for the priming DME to fully ferment out. 2 weeks is the norm for priming with DME. I would bring it back inside for another week.

Does DME=Dried Malt Extract?

If it does, then this should have fermented out by now.

I use about 80 grams of DME to prime each 23 litre batch of beer. It goes in the beer at room temperature, but the keg is then transferred to a cool area immediately.

The sweetness of the DME can be tasted for about 3 days, during which time the beer has little or no condition (gas). 3 days after being cooled down the beer has started to gas up and the sweetness has dropped. By day 5 all is well, the beer is conditioned and the sweetness has gone.

How bitter is your beer? How many IBUs?

dropped the hyro on a sample and it,s 1.004 so there,s hardly any sugar,s in the brew .tasted another sample and it tastes totaly different to the other day. it,s more floral and citrus like now.and very pleasent .do you think me taste bubs throu a wobbly the other day or is this still changing profile? guypttigru dme is dried malt extract and it was 35 ibu.sorry this is arse about face :oops:

If it tastes so differently so quickly, then your taste buds probably took a holiday!

To be serious, though, I've found beers can taste radically different over a few days as they go through the maturation process. However, as yours is a brew from December this seems less likely then your taste buds throwing a wobbly!

I once sampled a beer after eating strong liquorish and it tasted much sweeter! So your taste buds can be influenced by other factors such as what you recently ate. From my Psychology degree I seem to reall that all your senses can mislead you in many different and bizarre ways!

Could be diacetyl. Which can sometimes get better with age especially if bottle conditioned or on the yeast in keg.
