When do hops go from bittering to aroma??
I've been looking at some extract recipies that have hop additions every 5 or 10 minutes. I'd like to try this with some of my recipies but I don't know when the hops stop adding bitterness and only add aroma. I'm not sure if this makes sense!!

Hops will continue to add bitterness right to the end of the boil. How much depends on the quantity used and how long they remain in the copper whilst it is still boiling. To be sure of not gaining any bitterness extraction then steep them after you have turned the copper off, this is usually done at around 80oC. Anything from 1 minute up to an hour works.

When do hops go from bittering to aroma??
That makes sense, I guess the difficulty I have is that these recipies often say that the more regular hop additions during the boil are for a more rounded hop profile, whereas it just seems to be adding more bitterness?

I recall reading in the Dogfish Head owners book (the man who created the 60/90minute IPA's) that they had done some tests and that actually over 30minutes of boiling it didn't make any difference when the hops were added. I.e. There is no point doing a 45minute addition, it will be the same as a 60min addition.

hahah cheers, I don't feel like one, only started homebrewing 14months ago! I guess everyhing one reads gets logged and stored somewhere!
