Im going to go for the Lime trial, looks like it might be a winner. I particularly liked his results for the different flavours using Lime.

The lime and nutrient seems a much smoother progression of the colours as the sugar caramelises.

I also like the fact that the experiments were without a thermometer and time based. Mainly because I can feel confident that I could obtain the same results without buying more equipment.
