Coopers Real Ale Tweak

Any good recipes out there, i have a Coopers EB which i am going to dive into the world of Grain and Hops and make the Hop Gobbler, but i also have a Real ale too which i reckon will be quite blande (if the Oz Pale Ale) is any standard to go by, so i am looking for a decent recipe to spice it up, going to the beer shop tomorrow with Mrs BarLoch to get her a muntons cider and want to get some stock in

Any ideas??

AG#41 - Vienna Lager - 5.6%
AG#42 - Heritage Double Ale - 10.5%

On Tap:
AG#44 - Harvest ESB - 5.4%
AG#45 - Amarillo Gold APA - 5.2%

Hopefully, I can bottle the batch below this evening. It's been in in FV1 and 2, combined, for a total of 3 weeks. Only negative is it might be a bit light, for some at this time of year, but hey - I took a sample last night and it's gorgeous (even though it's flat)!

1 x Coopers RA
1 x Coopers Light LME
4 x Lemons, juice and zest
23 litres bottled water, of which 20 litres should be < 20°C.
- wort: 25 litres, OG 1041.

Make the brew as usual except, while the yeast is rehydrating:
- Grate lemon zest directly into your boiling pot.
- Strain juice through a seive, into the boiling pot.
- Add 2 litres water to lemon zest & juice, and as soon as boiling, transfer to to FV.
Then, carry on with the kit, as normal
... wait 3 weeks and bottle!

To christmas - ify, just a little cassia bark (cinnamon) in the FV, and perhaps, swap some/all of the lemon for orange?
