2 succesful recipes

Coffee wine
2lb sugar dissolved in warmed water; 4Tbsp instant coffee added; cooled a bit while yeast rehydrates
Into demi with 1tsp citric, 1tsp nutrient [NB CJJB recipe says 1tBsp citric, not sure now what I actually did]
Plenty of headspace left for later feeding; pitched yeast (Gervin D)
Weekly intervals: Added 1/2lb sugar dissolved in 1/2l warmed water; Added 1/2lb sugar dissolved in warmed water; Added 1/4lb sugar dissolved in 1/4l warmed water; Removed 250ml and added 4oz sugar in 250ml water.
When done, racked and stabilised. Added a few drops vanilla. Left to clear.
Bottled when clear - very tasty, not oversweet
Would use high tolerance yeast next time (and consequently even more sugar...)

Mixed berry melomel (fruit-flavoured mead)
Just over 1 kilo each strawbs and rassies lightly mashed in 1 litre boiled water, with Campden; added 500g honey dissolved in 1/2l; stirred/mashed twice daily for 5 days
Strained to demi; 1kg honey dissolved in warmed water, added to demi; 1tsp citric, 2tsp nutrient, bit of strong tea, 1tsp pectolase; cooled to pitch temp, pitched yeast (Gervin D)
After about 10 days, added 250g honey dissolved in 1/2l water
After another week, added 250g honey dissolved in 1/2l water, tsp nutrient, tsp pectolase
After another week, racked, added 500g honey in a little water, Campden.
After 2 months, had been almost clear for a while, so racked+stabilised
Bottled when fully clear. Good flavour and not oversweet. Believed to be between 15 and 17.5%
Would use high tolerance yeast next time, maybe keep sugars the same and have it slightly drier.

Ive been toying with the idea of this coffee wine for a long time
could you tell us what it tastes like and how you drink it?

I love coffee and this sounds great but is it like an ice coffee sort of thing or more of something that u have a shot of?

Thankyou very much for all the hard work you put in, been following ur posts for a while now and am big fan!

It approaches Tia Maria (but not all that closely really) largely thanks to the vanilla I think, but obviously is nothing like as strong. Although it'll be close to 20 next time I make it...
Or maybe one of those thick sweet Turkish coffees, but cold and with alcohol in it...
I made it with the cheapest instant I could find as I half expected to be throwing it away but we really like it!
I bottled it in 275ml J2O bottles as I didn't think it'd be something anybody'd want a lot of (and I originally intended it to be very strong, but it isn't, this time)
I can't imagine mixing it with anything. It might be nice chilled.

Fun tip: how to split your Campden&sorbate stabiliser between 16 small bottles, if you can't be arsed to rack onto it and then bottle?
Dissolve them in about 50ml of water (or drawn-off wine) and use a small syringe to dump 2.5ml into each bottle. Doesn't take long. We have a few of those syringes from when The Lad was ickleand needed Calpol etc.

the way you say u used cheap coffe but couldnt tell the differnce has interested me

but know A) I can get is cheap in asda and B) it tastes like horse manure

I don't think I said I couldn't tell the difference - I've not brewed with any other coffee.
I do say it tastes fine.

When I drink coffee as coffee, I go for Taylor's Hot Lava Java or Rich Italian

Good question. What with the progressive addition of sugars so that there's no proper Starting Gravity figure, and the removal of samples partway through leading to dilution, and not quite believing what the hydrometer said for the Final Gravity, I'm really not sure.

The coffee is at least 13%, but tastes like a fair bit more. I reckon it's about 16. That was with a standard wine yeast, when I make it again I'll use the Gervin high tolerance one and try for 20.
The melomel is probably also about 16.
