Hi all.

I pitched my 1.071 OG lager with the proper amount of W34/70 (70g/55l) and fermented it at 11°c. Once it hit around 1.028, I ramped up the temperature to 17 degrees over 3 days and held it there for 2 days. Now it's time to lager but it still hasn't reached FG. It's currently at 1.016 and I expect it to get to 1.013 or 1.014. If I lager now at 4°c, will the gravity continue to drop or will the yeast go dormant and start fermenting again once I have bottled it?

Dunno...probably, given enough time? Send a message to zgoda, he's a real lager purist.

71 to 16 is 55 points and is slightly over 77% so you may be done. Gve it more time just to be sure.
