De-ionised water won't do much for wort sugars. I think it was GW who said over time you'll notice a delayed reading and inaccurate readings if you don't clean the probe with a proper cleaning solution.

afaik co2 is mildly acidic in solution so wont be detrimental, tho i wld decondition the bottle first by releasing the cap the day before mixing and leaving it slightly unscrewed in a warm room.. i dunno but if left carbonated the acid addition of starsan may stimulate massive co2 release foaming out the gas and perhaps making a mess??
