Is this actually just as simple as putting late hops in with no bittering?

Eg;

Do an hour boil and add in hops at 5 mins?

yes, but the aroma hops used such as cascade/citra/centennial/chinook/etc etc are usually very high alpha as well aka bittering as well.

it's usually also a good idea to bring the 'steeping' temperature down say to 80-85oC otherwise if you had a 30mins steep at 90-100oC you'll get a very bitter ale.

Thanks for that roscoe.

I was thinking along the lines of galaxy or simcoe.

Drop them in at 80 degrees for 5 mins then dry hop with them also?

chuck the hops in late (say a few massive charges in the last ten or fifteen minutes), but make sure you cool the wort quickly so the vast quantity of hops doesn't massively over-bitter the beer (above what is expected). nothing to say you can't chuck in a small sixty minute addition as well though..

I recently did a 23L brew with 500g of hops (Cascade / Citra / Nelson / El Dorado) all in late (10min & 5min) plus 100g dry hopping. Came out superb. Left it steeping for about 10 min is all then chilled.

Cheers. So quick cooling is probably the most important part.

Hopefully get something decent out of the weekends brew. All pale malt galaxy hopburst!

yeah it seems to be agreed that bitterness is still imparted below boiling point. not a problem when steeping 30g of goldings in a bitter, but when holding 500g of high AA hops it could make a noticeable difference. otherwise, maybe steep as normal but maybe shoot for a lower calculated BU?

Fermenting -
Conditioning - Meads - Raspberry Melomel yeast test, Vanilla Cinnamon Metheglyn, Orange Melomel.
Drinking - Youngs AAA Kit; Leatherwood Traditional Mead, Cyser, Ginger Metheglyn.
Planning - Some kits until I can get back to AG, then a hoppy porter, Jim's ESB, some American Red.

Came out really well, was sad to reach the end of the keg. It was one of those that you knew was coming to an end but prayed for just one more glass [-o<
