Just started a gallon of apple , starting sg is 1.040, is that ok or do I need more sugar, gallon apple juice and a pound of sugar ,,,,,cheers '

1.040 ferments out to about 5.5%
But apple juice on its own normally gives that and you've got a pound of sugar in there as well
Something isn't adding up
The sugar should give you another 5%
Was it properly dissolved or was a lot of it sitting on the bottom?
Hydrometer temperature correction?

Very traditional recipe.

1 lb fruit (or tin off)
1 lb sugar
1 gallon
Yeast + nutrient
Makes a country wine between 10-12%

Apple juice alone makes cider @ 4-5%

Apple wine really.
A smidgen of elderflower cordial, in the fermentation near the end will round it out nicely.
