It was a tad over 80%, but as I formulate all my recipes with a 75% efficiency anyway I don't worry about it all that much.

As Vacant said though that was with a Braumeister, so the mash was being continually recirculated

If you use a full volume mash, do you add all of the calcium salts or do you hold some back for the boil?

Depends on your water. If it is high in Ca (eg 100ppm+), salts can be added to the copper only
