christmas tc help required

Post by drmick » Thu Nov 06, 2008 11:41 pm

Hi All

was talking to my sister tonight and she suggested I do a cranberry TC/wine for christmas :? . Has anyone ever used cranberry juice as a starter for a brew? I was thinking of perhaps doing half apple juice / half cranberry juice then upping the sugar to get a decent amount of alcohol and fermenting it until it is done. Does this sound like a sensible plan?

If I want it more as a clear wine type of drink should I ferment it until it stops, and some finnings to clear it and then taste and sweeten if required, and bottle in wine bottles and leave for a while to 'mature' in the bottle?

Thanks for any help suggestions

DrMick

I've just set up a similar wine, 2l red grape juice 2 litres cranberry juice. It's bubbling away nicely in the demijohn.
Think a couple of people have posted they have tried this on the 'lidl red wine' post, I used Dewsfamily's recipe but substituted for half cranberry juice : http://jimsbeerkit.co.uk/forum/viewtopi ... 13&t=17142
No idea about the clearing etc.
Also found a wine site that mentions using fruit juices, towards the bottom of the page it has an elderberry kit modification using cranberry juice and the end result was 17% ABV! : http://www.yobrew.co.uk/wine.php

Thanks for the replies. I was in a bit of a rush when I posted and didn't think of searching the forum. Is there anything the TC brigade won't ferment :D . 17% ABV sounds like a suitable endpoint might have to give that a try

Thanks
