Hi,
Got Graham's (Wheelers) new book last week & I have to say, for the extract brewer, it's an excellent reference, especially, when used with BeerEngine of BeerSmith software.
Anyways, I'm looking at a brew that requires a Post boil hop'ing, which I understand is adding hops to the wort, when the heat is off & the temp around 80 degress C but for how long ? Also, what's the risks of leaving the hops to steep, as isn't there a risk, that wort could be infected, if the wort isn't rapidly cooled to below 30 degrees C ?

I do 20 to 30 minutes of it and then turn on the cooler again. This has resulted in clearer boiler run off for me and the yeast head has been alot cleaner so it is probably of benefit. Allowing longer for the hops and trub to settle out creates a better filter bed. Try not to worry too much about contamination, just make sure nothing can fall in.
If this still worries you just skip it out and chuck in some dry hops in secondary/cask.

Thanks for the tip.
I'd read that the lid needs to be off, during the boil + it kind of made sense to leave it off, during the post boil hop'ing, given that it's pretty much the same process but I'll deffo take the hint of leaving it off during the cool, as I'd hate to get that far down the line & cock it up
