Has anyone got any of the Hambleton's recipes please. ie Best Bitter, Stallion, Goldfield, Thoroughbred etc please? :)

I seem to think stallion is pale malt with some crystal..hopped with northdown if that helps.

I got some info from

93% Halcyon pale malt
6% Crystal malt
0.75% roasted barley

Hops: northdown

IBU/EBC 40

Could make a guess if IBU was separate? Don't understand IBU/EBC 40 :? Does that mean UBU 40 and EBC also 40? Any thoughts on hop quantity?

Plugged the info into Beersmith. While I can get the IBUs and proportions of grain right for the gravity, the SRM/EBC comes in quite a bit lower (13.4 SRM or 26.4 ECB) than the "recipe" states. I was using Crystal 120L too!

My recipe is as follows:

Batch size: 6 US gal. (23 l)
OG: 1046
FG: 1012
SRM (ECB): 13.4 (26.4)
IBU: 40.0
For 72% efficiency (I batch sparge and am still working to improve this)

9.5 lbs. (4.3kg) ESB malt (Pale Ale) (4.0 SRM) (92.7%)
0.65 lb. (295 g) Crystal 120L (120 SRM) (6.34%)
0.10 lb (45g) Roasted Barley (300 SRM) (0.98%)

1.5 oz. (43g) Northdown (8.5%)

Yeast: Wyeast 1275 or 1318

Mind you, Hambleton's website says that Stallion has "a distinctly malty character with a hint of nuttiness". I would think that the 120L would move the flavour beyond this description.

I've never actually tried this ale. The thing that attracted me to it is the fact that my mum's maiden name is Hambleton.

Thoughts?

Thanks. Looks good to me :) Only trouble is haven't got the Northdown hops! Got Challenger, Fuggles, WGV, Sryrian & US Goldings. I wonder if any of those would do? :? :?

I would use any low alpha acid English hop - Fuggles, Goldings.

Might change the hop character but if the recipe is good, you can adjust for future brews.

Let us know how it goes, if you choose to brew it.
