I bottled some bitter three weeks ago. Nothing fancy and brewed with my usual methods. It cleared rapidly within the first week (S04 used,protafloc etc) but never reached the star-bright state,as my ale usually does. From there,a distinct haze has formed and it seems to be getting worse daily. It doesn't taste infected at all,but the bitterness seems to be intensifying with time and is now verging on the unpleasant. The first samples had good head retention but now it's more akin to fizzy pop,yet the bottles most certainly aren't over-carbonated. I'm not happy! Anyone got any ideas what's happening here?

Hazarding a guess, I would suggest that if all the bottles are the same, you have not been completely sterile somewhere in the process, I have had the same problem with some bottles indicating that the bottles themselves were not completely sterile before bottling.

You may have pulled too many tannins through on the sparge. Did you over sparge?

Re infection. Apart from airborne contamination I can't think how it could've happened 'cos I'm really meticulous about it (sterilising!). I did brew and bottle during that warm spell,so what can ya do apart from refrain from brewing??
To be honest I've got a problem with sparging,and it might be a case of being lucky until now. Thing is,I don't know when to stop. I know it's advisable to stop when the SG gets much below 1010 but at what temp is that valid? I mean,are you supposed to cool the sample to the hydrometer's range? If a sample of the runnings was,say 65C,the true SG would be much higher. Besides,I use both fly and batch as the mood dictates and I really can't remember what I did with that batch. But I've read on here that you can't oversparge when batching due to some arcane buffering effect?? Oh dear,getting confused now,gotta go lie down.

You can adjust for temperature. Take the temp of the sample, then measure the gravity, then enter the details in this:
