cinammon ciderness

ello

just a quick question really. decided to make a christmassy TC, I got 4-5 cinammon sticks and boiled them for a bit to extract as much flavour as i could. added it to the rest of my ingredients and stirred. whenever i checked on it there was a lovely cinammony smell...mmm yum yum. anyways when the TC was ready and even when taking some wee samples along thr way the cinammon taste vanished :cry: anyone got any tips? should have i have added ground stuff? oh and on a side note my TC thats nearly ready (i hope) should come out at 16%! =D> =D> :twisted: :evil:

I done a similar thing (so did my mate) and we both experienced the yeast eating out all the flavour of the cinamon during fermentation.
I ended up adding a campdem tablet and spoon of potasium sorbate after fermentation was done, then simmering cinamon, cloves and vanilla in some apple juice, adding it all to a mini keg and adding co2 with a bulb.

Stick a cinnamon stick straight into the FV, when I was making TC one per gallon seemed about the right amount. I got lots of cinnamon flavour with that method.

I tried using ground cinnamon and found that it all fell to the bottom and was racked out, leaving only a hint that it was ever there.
Someone told me I should try heating spices in a sugar water solution to "crack" them to get the full flavour,
I havent tried it but sure as hell will be doing next time!
