Aroma hops - late or post boil?

I usually add my aroma hops 10 minutes before the end of the boil, but I've just done an IPA where the aroma hops were added after the boil, when the wort had cooled down to 80 C, and allowed to steep for 30 minutes before the wort was cooled to pitching temperature. So, can I expect much difference in the finished beer using this method? And what method do you prefer to use, or does it depend on what beer you're brewing?

I use that 80 minute steep method too, I think you get better flavour/aroma. Most of your aroma will come from dry hopping.

If i'm following a recipe from a book such as Graham Wheeler's, I now split the aroma hops in half and use the first half in the last 10 mins of the boil and the other half at flame out.

What do people think about the time to steep for? Been reading very mixed views on this. Some steep for anywhere up to 60mins, others try to cool the beer as rapidly as possible during the steep to 'lock' the flavours in

I chuck 'em in at flame out and start cooling immediately so they get about 20-30 minutes starting at 100C and ending at about 20C. I did once stop cooling at 80C and steeped for 20 minutes before restarting the cooling but I did not really notice any great difference in the final aroma. Try it a few ways and see how it ends up.

With aroma hops I always add them at flame out for pale beers. If I make a stout or something I don't bother too much as the hop aroma tends to be overpowered anyway.

I cool to 80*C and steep for 20 mins before finishing cooling. To be honest I'm not totally sure if this is an improvement over throwing them in at flame out and cooling immediately. I've been toying with the idea of making a hop tea using water at 80*C and chucking it in during cooling with the theory that it will have the same kind of extract effect as the 80*C steep but save me 20 mins...

That's what got me asking the question of how to late hop. There it says about cooling rapidly, and not steeping. Whereas I always steeped before that. On the last brew I cooled straight away so I'll soon find out....!

i throw them in at the end of boil. seems to work for me. they get a steep from 30 mins to one hour depending on the beer

i also do some beers traditionally
