Vacuum Packing / Commerical Hops

Hi guys,
When commerical brewers buy their hops, am I right in thinking they come in large bales which arent vacuum packed, but just packed very tightly?
How long do these bales last before losing too much aroma/becoming 'off'?

Where did the process of vacuum packing them come from? Is it to try and stop oxidation or something occuring?
