Bad STC probe position! Fermenting at 12-14C. :(

Now it is warmer I am fermenting 2 FVs in an STC controlled larder fridge in the shed fitted with tube heaters etc. I put the STC probe in a bottle of water in the bottom of the fridge and set the temp to 19C.

I brewed twice last weekend and the 2 FVs are at day 5 and day 7 of fermentation. I noticed today they felt a bit cold to touch and took some Thermapen wort readings: 12.5C one FV and 14.5C the other!! With the water bottle sat happily at 19C. :oops:

I have now moved the probe to the side of an FV and backed it with several layers of neoprene - it now seems to match the actual wort temp..... Lesson learnt, I will also an eye on this carefully now.

So. What will be the effect on my beers? They have been from pitching temp down to 12/14C over 5/7 days. :( One has WLP007 (down to 1.012) and the other is S04 yeast (down to 1.020).

I wouldn't worry. Lower temps usually equals cleaner fermentation - less esters and off flavours. Let them creep back up to 19°C and they'll ferment out in a couple of days. Problem solved !
