cooper stout

i have brewed a coopers stout as close to ditches as could do so that why not in ditches thread.
i use coopers beer enhancer instead of dme and has finished fermenting and siphoned to a barrel
i had a taste of it and it seems really thin tasting
i used 4 x 5 ltr bottles of ashbec water for the brew and just the extra rinse water need to get all malt out of coopers can
any ideas was about 23 ltr in fermenter
was under airlock for a week and no massive extra foam from fermenting
never had this prob before and is while since i brewed any beer , so thinking going back to all grain might be better than using a kit

Extra three litres of water catches my eye, mate. Amazing what a dash extra can do. BKE wouldn't help the situation either.

Why no dried malt?

well tesco don't stock it and didn't want to drive 10 miles to home brew shop to get it
the can hold just over a liter and as i wanted to get all the malt out filed it to brim

Sounds like ye could do with a revisit to my thread, mate. I think I summarised the early basics on the first page?

Anyway, in a nut shell? I top up to the four gallon mark after everything else has gone in.

Malts. Water. Heater. Yeast.

Hard to go wrong, see?


Can ye not buy dried malt mail order? I buy Ingredients Packs from my man, over here. He has a UK outlet too. Not sure how his prices can compare with tosco. But, look where that's got ye. I'm enjoying my stuff .... :|

It wouldn't be a 'Ditch's Stout' of course but you can buy liquid malt extract in Holland & Barrett or Waitrose.

Some believe that food grade malt is not as good as brewing grade malt. They might be right. I've used both, but not for the same kits so don't have a like for like comparison.

But the H&B or Waitrose stuff in the right quantities (adjust for the water element)will give you something a darn sight less watery than BKE.
