It was bred in Japan, but I think they either use all theirs for Japanese breweries, or else they no longer grow it in large quantities. Either way, the Sorachi Ace we see in the marketplace is US grown.

Surprised no one has mentioned mount hood or liberty. Have enjoyed both late....but got to go big I've found

Addendum...am strangely surprised Hawaii doesn't produce hops.. too hot/volcanic?
Just like trying new ideas!

Although...

Hallertauer Magnum
A bittering/aroma type cultivar, bred in 1980 at Hüll, the German Hop Research Instititute. It was bred from the American variety Galena with a German male hop (75/5/3). It seems to contribute to a smooth bitterness combined with a good aroma. This variety is now also cultivated in the U.S.

Amarillo (blends very well with simcoe).

I have made a pale with lots of Amarillo late in the boil which I have enjoyed but I have a bag of Simcoe and wondering how best to use it...

These two hops do combine well, and are used together a lot I believe. I'm no expert. I have used them both together as late additions, in the last 15 minutes. I think they are well suited to the technique of hopping entirely in the last 15/20/30 minutes. A handful of hops at the start of the boil, then nothing til 30 or 20 minutes from the end of the boil. Or later. Loads of hops 10 minutes from the end perhaps. Hence you use more to get a bitterness level of maybe 30 IBUs, and focus on aroma rather than bitterness. Use them side by side. But it's not the only way...

I'll be brewing this later in the year: IPA, O G 1.070, IBUs 70
three gallons
9.25 pounds PNW pale ale malt (or maris otter)
0.50 pound Briess munich malt
0.25 pound carawheat malt
mash at 150f for 60 minutes
0.125 ounce simcoe @ 12% plus
0.125 ounce amarillo @ 8.4% to first wort hop
1.00 ounce bravo @ 16.8% for 50 minutes
pinch irish moss plus
0.25 teaspoon nutrient for 15 minutes
0.125 ounce simcoe plus
0.333 ounce amarillo for 6 minutes
0.125 ounce bravo plus
0.333 ounce amarillo plus
0.375 ounce simcoe to steep and/or dry hop
S-05

Yes it was bred in Japan for Sapporo Breweries. Hmm........ I haven't bought one of those big silver cans in rather a long time, today seems like a good day to remedy that :beer:

Hi all I have brewed some fantastic beers with Amarillo,Simcoe Crystal but centennial is also amazing. So picking favourite will be very difficult but if I had too it would be Amarillo. I think Liberty should get a mention I brewed my first American Wheat beer using Liberty as a single hop brew I was very impressed with Liberties qualities. I have just bought some Anthumn for the first time and I have my eye on Equinox.

If there was ever a hop that could be described as "tomcat," Simcoe is it. It's a foul smelling and tasting hop to those who are sensitive to 4MMP.

If can pick just one hop, it has be Liberty.

Liberty is a very good choice yeast whisper.I have real plans for Liberty myself this year. I don't agree with Simone but each to there own, I can't stand WGV it's just plain down right NASTY!!!!. Yet people say it's a fab English variety hop.
