Sierra Nevada Celebration Ale - Dry hop or not?
I've just made a brew in the style of Sierra Nevada Celebration Ale, but using Amarillo instead of Centennial and not quite as strong so you can knock a few back!! It's cooling down in the kettle at the moment and smells beautiful. I'm just wondering whether to dry hop this one with Chinook pellets. What do you guys think?

i used chinnook in two brew and was not mad about it i found it was very ascidy ,but i suppose thats the grapfruit effect you get with this hop didnt dry hop with it tho , just looked in my notes and i dry hopped the one batch with crystal. and acording to my pionts out of ten method i was much more in favour of.but if you ve used this hop before you,ll know what your getting

I am goin to dry hop this puppy. us05 is a great yeast but it just doesn't drop out for ages, making it difficult to dry hop. I'm thinking of doin a secondary. Does anyone else rack it off before dry hopping with us05?

With that much hops it might not get crystal clear anyway. Unless its really cloudy, i'd leave it. I must add im not obsessed with crystal clear beers.

I have added a recipe to the recipe forum for this ale i got it from an interview with the brewer from sierra nevada on the Jamil show dry hop it with a 2/1 ratio@ 1.48 grams per litre cascade/centenial
in your case cascade/amarillo

Thanks Denis - might give that a go!
My thing about racking to secondary is not because I'm worried about clear beer. us05 usually drops bright after a week in the bottle anyway I find. It is just that in the fv the yeast just sits on top with a thick creamy head for ages after the ferment has finished even if you chill it down, it doesn't drop. And when I dry hop I usually just sprinkle pellets on top of the beer. I could just scoop the krausen off I suppose.

Last time i brewed an IPA I used S05 I had the same thing a thick Krausen that didnt want to go, the brew was dry hopped so i racked the beer from under the krausen to a secondary and then went ahead and dry hopped, no problems and the beer was reasonably clear by the time i kegged it, but really the brew will probably be ok what ever route you take just wondering if you have any problems with dry hopping with the pellets without a bag. Does any of the hop matter get through to your keg/bottles? How do you prevent this happening? I have never used pellets so new territory for me, my centennial and chinook are pellets but the cascade are whole i was also thinking of using a cut of piece of denier stocking in the boiler and may go down this route for the dry hop i imagine the pellets break up into quite small particulate

I just dry hopped this brew with 30g chinook pellets. I know the recipe from 'Can you brew it' says dry hop with centennial / cascade, but I'm only using the recipe as a guide and I want to see what Chinook is like for dry hopping.
Jamil recommends just throwing the pellets in the brew for dry hopping. They break up and sink to the bottom after a few days, but like you I had to rack it off first.
