Brew Day - 03Mar07 - EB Stout

This is another slight tweak of my usual stout (lower on Flaked Barley because I have run out :oops: ). Here's my recipe today:

Brew length 19 litre based on 85% efficiency
2500gm Pale Malt, Maris Otter (3.0 SRM)
400gm Roasted Barley (300 SRM)
350gm Flaked Barley (1.7 SRM)
300gm Cara-Pils/Dextrine (2.0 SRM)
51gm Fuggles [5.00%] (60 min) Hops 34.0 IBU
1 tsp Irish Moss (Boil 15.0 min)
1 pkt Safale S04 yeast (made up a starter this time)

Mash 90 mins in 11.0 litres at 67C
Boil total 90 mins

Expected: OG = 1.047 FG = 1.012 SRM = 23.8 IBU = 34.0

Looks like a nice recipe EB! I also fancy doing a stout - I even got some roast barley in with my last order. Forgot about flaked barley, though! :?

Try replacing the flaked barley with wheat of some description Jim, it makes an interesting change flavourwise and still gives good head retention :wink:

Good idea! I've got plenty torrefied wheat and wheat malt. 8) That could be my next brew, in fact.

I'll be interested to hear how you get on with the Wheat :-k

Well I forgot to refil and heat the HLT in preparation for the sparge so I ended up with a 140 minute mash :oops:

Slurp dropped in though and we had a good long chat while sparging was in progress :D Now 15 minutes into the boil.

I made an Eskimo Bob stout with flaked Maize instead of barley - not advisable as the maize flavour doesn't really work.

All done and cleared up now. Just time for a couple more photos:

Spent hops (just because I have not photographed them before :lol: ). Can see that they are well drained.

Right, OG is 1040. Lower than I was aiming for but the reason for that is simple... During the boil I convinced myself that I was losing a lot to evaporation and needed to top up so I added in two kettles of boiling water (about 3.4 litres). Not sure what planet I was on because I actually collected about 3.4 litres more than I was expecting in the end so therefore I have effectively watered it down to a 22.4 litre batch.

My overall brewhouse efficiency for this batch is therefore 72%. If I calculate efficiency allowing for the increased volume collected then it would have been 85% which is about what I normally achieve :roll:

Next time I will trust my water calculations rather than adding in extra during the boil :oops:
Still, if it gets down to about 1010 then it will be about 3.9% which is about how I like my Stout - means I can drink more of it :lol:

Nice one Bob. I be partial to a drop of stout, and yes, you can do one better than Guinness.

Don't feel glum about the slip up, my brewday was cockup central too :D

Brew liquor at PH 4.6...before mashing...ouchy.

I use flaked maize in my Beamish Irish Stout to replace maltose syrup. It's one of the best stouts i make. I use 5 % flaked maize maybe you are using to much
