Amarillo Hops - Recipe Suggestions?

I've got some Amarillo (100g) that I want to use, also have pale, crystal and amber malt. Other hops that I can use are Oregon Fuggle and Styrians.

Does anyone have as recipe that uses Amarillo that I could nab?

If not I was thinking of this:

4600gm Pale Malt MO Grain 94.5 %
270gm Amber Malt Grain 5.5 %
70.00 gm Amarillo [4.00%] (90 min) Hops 28.0 IBU
30.00 gm Amarillo [4.00%] (at switch off - steep)
1.00 items Whirlfloc Tablet (Boil 10.0 min) Misc
1 Pkgs SafAle English Ale (DCL Yeast #S-04) [Starter 25 ml]

25L Batch
Est EBU 28
75% BHE
Target OG 1044

What do you think? I'm after a Pale session beer with lots of Amarillo flavours and aromas, I loved the hoppy aroma from Rolling Hitch.

Any advice gratefully recieved :D

Hi Wez, these hops have a slight orange tang, is that right? I've been meaning to give these a go. Did a forum search, how about this

Hi Wez,

Like yourself i have some Amarillo hops (8% alpha) from Brupaks and was going to brew with them this week.

Similar recipe to yourself in terms of hop additions , but i am going to use just pale malt to see what the difference is compared to other hops.

Hopefully compare hopping results after brewing

A recipe of 90+% pale ale malt and a little medium crystal would be a great start.
I would include a big addition somewhere between 20 minutes and end to get a big flavour hit.
A lot of amarillo beers use a clean bittering hop, particular something high alpha, so don't be afraid to put something else in for bittering and use all your amarillo for late additions and dry hopping.
I would also recommend s05, or us56 as it used to be known, for the yeast so as to not interfere with the hop flavour.
There's a popular beer here in Australia called Golden Ale that uses it extensively, and the recipe for it, at least close too, is 30% wheat, a small amount of crystal, and ale malt for the rest. Bittered with pride of ringwood and all amarillo for the rest.
This is my version, which came out pretty close, and was a very tasty beer. It is a mini-mash so you could just replace the extract with ale malt

I've used Amerillo a few times and it works well in pale ales and darker beers. The only thing I have noticed (and it might be worth keeping in mind) is that the amerillo flavour can take over a bit if you are a little bit heavy handed. :?

My current drinking ale is an 80/' which has amerillo as an aroma hop. It really is lovely although you will not have tasted anything like it before. You are welcome to the recipe but you appear to be trying to make a pale ale.

Tribs' Amarillo IPA is a winner (try a search). Although you need Special B for it.

I tried an all Vienna base malt beer hopped with Amarillo which turned out alright, not good enough to recommend though :lol:

Cheers for the feedback chaps, I'm a bit restricted by the other hops that I have in stock and I do want this to be a pale ale, I think that I've settled on this :

wez where did you get the amarillo gold from (4 %) the amarillo i got was about 9 % IIRC.
Since its such a simple grist (pale and light crystal) If it was me i'd lose the fuggles and do a single hop brew that way you'd know exactly what these hops bring to the table.

I picked them up from my local micro, he warned me at the time that they were low AA, and I wish i'd picked up 200g not 100g, thats the problem, I need to get the EBU's from somewhere but still want to late hop with Amarillo and I thought that using the Fuggle in the boil would be the best bet :?

The last lot of Amarillo's I got as a group purchase from Charles Farams were really low alpha too. They were also brown and I thought they looked a bit suspect so I chucked 500g in the bin.

Hmm, these do have a quite a yellowish tinge, whats the general concensus guys - scrap them and brew something with my nice fresh styrians instead? I'd rather do teh Amarillo brew 'properly' if i'm going to do it.

After reading your post and I did just that, I wasn't impressed to be honest, I dont profess to be an expert in these things but they didn't smell fresh - not stale just not as fresh as the other hops I have in the freezer they are definetely yellow/light brown too whereas the others are a nice healthy green colour. Therefore I'll be brewing something different (completely) Borve Ale from BYORAAH with a couple of alterations to fit the hops I have (Fuggle & Styrian) I'm about to post a brewday thread.

Definitely the right choice!! If the aroma from these doesn't hit you, and the colour sounds way way wrong, then don't use them.
You just won't get the flavour and aroma you should, and would want, for an amarillo based ale. Save it for when you can get some fresh ones...
