My brews seem to taste grate after a few hours of fridge time, but continual time in the fried seems to leave a slightly sour taste (it’s a brew that used target hops for bittering and EKG for aroma, bottled) any opinions?

Treat beer the same as you would treat milk,fridge it or it will go sour after a while.

I think you misread what he was saying, he was saying that if he leaves it in the fridge for a length of time, it tastes off. Furthermore, my kegs are stored at room temperature for (in some cases) months and served via a flash-chiller.
