Black Molases extract value?

Post by OldThumper » Sat Oct 30, 2010 1:17 pm

Hi,

Does anybody know what the rough degrees per KG blackstrap molasses gives in a recipe? My Porter recipe calls for 500g of black molasses but Beer Engine (the software I currently use) does not have this as a fermentable ingredient.

I can only guess and say it is similar to sugar, which is around 375 LDK (litres degree per Kg) :?:

Thanks for any figures! Done a search but not come across any data yet....

ProMash lists it as 1.036 SG pppg.
To relate that number to something else, ProMash lists loads of liquid malt extracts and they are all 1.035 to 1.037 SG pppg (so about the same).

Hi!

I found it in a book I have... (How to brew - J Palmer)

IT lists it as 36 points per pound per gallon
It also says that fermentability varies between 50%-70% as the ratio's of certain sugars very with each product...

Hope that helps

Yeah, but neither of us answered in the correct units. :D

Thanks a lot Boingy and MG!

This makes sense because 36 ppg is about 301 LDK:

LDK = PPG * 8.3454 = 301

I will enter this figure in to Beer Engine.

Up early this morning to brew the porter with a storming headache after too much Hobgoblin last night :?

A fair bit of Liqourice is going in this brew so i really hope it turns out ok.

Forgot to mention - how do you determine the EBC of ingredients such as black molasses :?:

I am going for about 1000 EBC because it is black. In a porter it does not really matter as I know it won't affect the colour of the beer, e.g. it will be black for sure given the amount of chocolate malt. Not sure about using it in other styles of lighter coloured beer though....

I always assumed that "sugar invert no.4 syrup" 600 EBC was black molasses!

On a similar theme: I've just added carahell, carared and carafa special III to my fermentable database on Beer Engine (which is a great feature BTW - nice 1 Graham!). I know the colours and I know the fermentabilities are probably about hell(50%), red(50%) & CS3(15%), but I am just guessing for LDK. I think these are newer malts, so there's nothing in John Palmer's book. Weyermann have quite a good website, but nothing on there either!

Is there any way of finding this out and is it that important?
