Hello,
Plan to use the the highest alpha hops I've tried yet to make a pale ale full of it's signature flavour. What's this like as a schedule?

23L @ 85% efficiency, 90min mash @ 67°C, 90min boil, liquor = sweet pale ale

I'm thinking around getting the most from the hops, but scrub the 60 minute, having just supped Hophead (finished work early again) it's gotta be the flameout large addition on top of a modest full boil charge.
Am thinking 1.040 beer, 25IBU full boil and double that weight at flameout. Given the hop notes are citrussy/winey and the beers' pale that's gotta be good no? Possibly add 3% Caramalt as well to make a sweet foil to the winey-ness.

The yeast is a malty one which errs toward my favoured side though not particularly considered in reference to the recipe, but it's the available yeast on Friday.

I'm thinking I definitely want some backbone though not colour so have upped the Caramalt to 5%, adjusted the hops for age, and given my chosen step of force carbonating tends to diminish hop aroma added a post boil steep. Still not sure about the yeast but it's what I have.

I dunno yet! I'm half expecting to open the pack of NS hops and find they're pellets which I can't use with my strainer anyway!

Si, the first beer I did using these hops went like this in a 23 litre brew
10g 90 mins
23g 15 mins
23g 5 mins
34g 0 mins
A/A was 13.8 then
the beer came out as one of my best ever, I used US-05 to let the hops through.
your first hop schedule looks good, where are the hops from? Craftbrewer?

I am interested in this as I am planning a similar beer myself as I am actually starting to develop a taste for these hops. I picked up a bag of 2008 Nelson Sauvin hops from my LHBS for £6.50
last week (this year they are 11.5% AA) so am intending to do a beer along the same lines. I am intrigued by the Edinburgh yeast though - is that supposed to be a clean yeast? Like Garth, I tend towards US-05 now for making clean tasting hoppy beers.

Reading around the Edinburgh yeast shows up the maltiness. It's similar to WLP002 but lets the hops through more. Need to try it in a familiar style really to find out,

They smelt pretty good when I just portioned them out.
Just noticed that they're 2008 not 2007 as I said earlier. Due to the ageing allowance I'd made I'd have been nearly 10% out with my IBU's had I not noticed
