Brewers Caramel

Post by Bigster » Tue Jul 11, 2006 10:49 pm

Planning my next brew ( last weekends is not for my consumption) . Was going to go for A SL clone but not sure I can get the fancy dan malt needed very easily.

The other 2 that appeal are the DL recipes Directors or Ruddles County both of which have new, to me. ingredients. Directors has Barley Syrup which Leyland homebrew stocks but ruddles county has brewers caramel in its list which I cant see.

Has anyone used brewers caramel, is it called something else , where did you get it from?

Cheers

You can make caramel colouring by browning/burning sugar on the bottom of a pan, then slowly dissolving it in a small amount of water (a little residual heat on the burner helps with solubility). It looks like you've ruined a perfectly good pan, but it comes off eventually and does the job. I have a coq au vin recipe that suggests this for colour adjustment.

I think this would be perfectly adequate (if unnecessary) for beer production. Probably it's used for consistency's sake.
