
You should hopefully be able to get East Kent Goldings....... if you can buy hops from this source ask what the Alpha acid content is and write it on the bag....
Follow the Extract guide at the top right hand of the page, this will get you off to a great start.
A good recipe to start with would be 100% Satisfaction (simple and tasty!) from Mark Ollosson's book: Real Ales for the Home Brewer, lots of other good recipes in there too!
I made the move to extract in November last year and I've been delighted with the results (better than kits IMO, and anyone else's that have tasted my brews)
My best tip is to make sure you adjust the hop rates you use to match the Alpha acid content of the hops you buy (these will varie from the ones printed in the recipe), use DaaB's calculator (the link is at the bottom of all his posts). The target IBU's will be stated on the recipe. I didn't do this on my first brews and they ended up too bitter, as they were over hopped.
