At what temp does the cold break occur?

I just try to cool my wort from 100-30 C as quick as I can. But is there any particular range that is most important?

I've noticed people talking about steeping the last addition hops at 80, so I'm guessing that it occurs lower than that, and it isn't too important to cool rapidly until after the steeping.

I tend to allow it to cool on its own 'till the wort hits 80C, once the IC is on I normally see the cold break - anywhere from about 80C to 20C for me.

So chill to 80, add the hops and just carry on chilling?
