I used plain honey in my first extract which made a nice sweet after taste. Was told to use orange but couldnt get it at the time. Bought the orange this time to put in my next extract but was wondering what effects the other honey's in the pics would have. Or would it ruin it & i end up tipping them down the drain?

Have no idea what the lavender one would be like (could be very nice) but the eucalyptus one is a big no no, that would end up down the drain by all accounts unless you like your beer menthol flavoured :lol:

All the others would be fine.

I will buy the lavender honey next week & see how different it tastes then will decide on making a smaller batch.

Lavender honey has a very strong lavender taste so it might be a bit too much, I wouldn't use it

Stick with the citrus one, it works well with a lighter style beer.
Back in my extract days I made a honey wheat that contained 500gms of citrus honey added at flame out.It was lovely.

Totally agree with Mr Bond, use the orange blossom it'll work a treat and it's great for mead too :wacko:

I would keep it away from beer to be honest, any time i've added honey to a beer a feel it has added very little. You would certainly have to throw in a few jars of the stuff to even detect that you have used honey.

An orange blossom mead might be nice though. :-k

Mysterio..... The extract im drinking at the mo has honey in it & its bloody luvly. Will use a touch less next time as the tang was quite sweet. But bloody refreshing.

Fair do's. I've never given it a serious attempt, i've only ever bunged some in at the end of the boil to see what happens. Most of my beers have piles of hops in which probably masks any subtleties :=P

And my Honey Beer V2 was fantastic, Myst give the recipe a go if you like the stuff in your beers :D

Maybe i'll give it a go at some point, i'm definately planning to get a couple of gallons of mead going soon... Orange blossom sounds like a good place to start.

I can tell you from experience, orange blossom honey is excellent for mead, or even in beer. (In beer I add at least 1 pound to a 23L batch.) In this part of the world, I can get it by going to any flea market where a beekeeper may have a stand, and it will be very inexpensive. (Groceries also have it, but then it will be filtered, pasteurized, and twice the price.)

I've also heard that California orange blossom honey is good, and different from the Florida variety. Perhaps you could get Seville orange blossom honey, being closer to Spain than I am. Would that have the wonderful marmalade flavour?

Have you ever brewed anything with Seville orange zest? Or chinotto orange zest?

I've tried adding honey into beer, it does work a treat. I actually added it instead of priming sugar. It could have done with a bit more honey, I think a lot depends on how strong the flavour is in the beer to start with. A light beer won't need as much honey.

IIRC, eucalyptus honey shouldn't be used for brewing. At least in meads, i dunno if it applies to beer.

I made an orange blossom mead. The smell is amazing, but it tastes like cough syrup at the moment... needs some age on it.
