It be reet man. Chill.

Whip the lid off get your nose close to the surface n sniff hard up your nose. If you get a fizzing in your nostrils it'll be fine. If not its finished.

Depends on the yeast, temperature and Gravity of the beer, I've known a ordinary bitter to ferment out in 36 hours with Safale 04. Measure the gravity of the beer with a hydrometer if its around 1.012 or lower its on its way to being finished, give it another 7-10 days in the FV then rack it to keg / bottle it.

I did the gravity yesterday morning and it was 1038, did an other reading this morning and it had fallen to 1018. The temp has been pretty stabile around 23c until this afternoon were it had droped to 19-20c.

When I took the lid of and took a good snif, it was a sharp yeasty smell, but didnt smell bad.

thanks

Hey Aleman, leaving it in the FV untile 10 days seems to be common advice - can you tell me why this is?
thanks mate

Addled, it gives the yeast some time to clear up after itself and removes some nastys. Generally leave on the yeast for 7-10 days then either keg or transfer to a secondary.

Hi Aleman and others

Took another gravity reading this morning and got 1012, and temp 19c, I also like to think that the brew looked a little more clear this morning, there is no bad smel just a nice smel as I remember it from when I was a child, my grandparents was living next door to a small local brewery.

mchansen,

Sounds like your brew is pretty healthy.

I'd follow Aleman's advice on this one. Leave it for a few more days to clean up after itself, then rack to secondary or keg etc.

Hope the smell brings back fond memories.. it does for me, every time!

I love having a big sniff of the fermenting brew. That co2 rush to the brain.... wicked. Just make sure theres nowt dangerous to fall against.
