2 Weeks Nearly Up

My instructions say to leave in the pressure barrel for 2 weeks however I have seen instructions that say longer than this produces better results. If I try the beer at 2 weeks and then leave it will it continue to get better or once I've started on it will the improvement halt?

As a general guide, you should leave your brew to mature for half the og per day. Eg, the starting gravity was 1040, leave to mature for at least 20 days. I always felt that the instructions on the kits regarding maturation are somewhat on the optomistic side.

If you do decide to try your brew now, it will still continue to mature.

Sample it now, again in a week to notice the difference but don't start drinking it proper for a further 4 weeks and you'll see how it's matured.

You really need to build up a supply so that you're not drinking green beer. :wink:
