How Low Can You Go?

Having narrowly avoided divorce.....

I have now had to set up in the garage were it is very cold. Typically 40deg F. Have set up the FV on a heater tray and inside a well insulated box, but the temperature of the water is still only about 60 deg F. What is the minimum temperature for fermenting? I am only at the kit stage and doing ales, no lagers.

Depends what your brewing and what yeast your using. Lager yeast can brew as low as about 10-12 deg C.

The best range for ale yeasts is 18 to 22C.

But as Chris says, many yeasts will work at lower temperatures, although it will take longer for fermentation to finish, and there is a greater chance of it sticking.

I have a set up in the shed, not as dark as the garage, however it is just as cold !!!
