Kolsch dried yeast

Post by macleanb » Sun Feb 22, 2009 10:36 pm

Thought I might have a crack at an AG kolsch (Just pilners with a tad of wheat and hallertau) with a mind to it being nicely lagered by spring. Currently have a pilsner in the fridge (ony room for 1 vessel) but I reckon the old shed will be darn fine for lagering once PF has finished for a few more weeks yet.

I wondered if theres any alternative to the rather expensive/fiddly liquid yeasts, cant seem to find any dried anywhere - is there one any one knows of?

Kolsch uses ale yeast doesn't it? So I guess you could use a low-ester dried ale yeast (notts maybe), at lowish temp, maybe 17Cish, before a lagering?

Safale K-97 is supposed to be a Kolsch yeast.

S-23 (a lager yeast, I know) would make a fair approximation of a Kolsch. It's a bit on the estery side as a lager yeast...so pretty much what you want.
