Torrefied Wheat / Wheat malt - Alternative

Hi,

Just looking at Graham's new book & was wondering if Muntons Wheat spray dried malt extract, could be used as a subsitute for both Torrefied Wheat & Wheat malt ?

If so, what's the conversion rate ?

Muntons wheat spraymalt is 50:50 wheat and barley malt, so use double the amount of wheat in the recipe (then take half this off of the malt extract used).

Excellent, thanks for the tip, I'd have gone down the 1:1 route.

So any idea what the difference between Torrefied & Malted wheat is, as I assume they're different ?

Yeah, malted wheat is what it says it is, ie wheat that has been malted as you would with barley. Torrefied wheat is unmalted wheat which has been heated and burst like popcorn. Torrefied wheat is generally added to a recipe to add head retention to the beer. It does also impart a bit of flavour to the beer depending on the amount you use (which some like, others don't). To be honest, if you're doing an extract version of an all grain recipe you could just leave it out rather than replacing it with wheat spraymalt - its really not going to make a huge difference unless wheat is a significant proportion of the grain bill.

You could use a small amount of flaked barley to get much the same effect on head retention.
