Recipe for cascades for this evening

Post by Earth Titan » Fri Apr 24, 2009 1:33 pm

Just been given a sealed pack of cascades by a mate who says he won't be needing them.

Want to brew a nice summer ale this evening (thinking about something with a nice citrus twang) so these should be fine.

Anyone got a suitable suggestion for a recipe?

I also have fuggles and goldings so thinking caps on chaps...

My "standard" single hop recipe goes like this:

5Kg Maris Otter
250g Medium Crystal
150g Wheat Malt or Torrefied Wheat

If you wanted a paler brew, then maybe substitute a couple of kilos of the MO with Lager Malt, and/or the Crystal with Caramalt.

For the hops, what AA are the Cascades?

If they are 8% AA, then the following would give you about 40 IBU:

25g First Wort Hop
50g 15 minutes
25g Flame Out or 80C steep

For yeast, I'd go with US-05

This should give you a rather nice summer ale bursting with that yummy Cascade goodness!

How about Townes IPA from MO.

4880 pale Malt
195g Wheat Malt

96g Cascade (5.2%) start of boil
27g last 15mins

US-05 would be good

Mash 65c

1.045 OG 40 IBU

That is definitely one fantastic brew - I must make some for a BBQ again 8) Last time, it took about 4 weeks conditioning to really come into it's own - and US05 definitely the yeast to go for - Nottingham second choice

All I can say is that I'm a huge fan of Pure UBU, which uses 100 per cent MO, Challenger and Cascade hops, so thats what I've got in the FV right now! I used 4.5 Kg MO, 50g challenger in a long 2.5 hour boil (trying to caramelise some colour into it), then 25g Cascade last 10 minutes. Unfortunately, it only went into the FV on Friday, so I can't tell you whether it's any good yet!

I don't really like cascade's! I would use a bittering hop, just not solely cascade's...Mine would be MO and 4% crystal, with a good clean bittering hop and cascade's at 0 min, steep for 15 mins..... S-05 or wet yeast equiv. ......

Thanks for all the advice. Much appreciated.

Got distracted by one or two other things on Friday so I stuck with a recipe out of GWs book. I'mm now the proud owner of 23 litres of Hopback summer Lightning.

The Townes IPA sounds interesting. Thats one mother of a lot of hops for a 23 litre brew though  . How does it taste?

Brilliant! Floral, a bit spicy and really refreshing for summer!

That bottle of Townes IPA I had from you (when I purchased the refractometer from your good self) was gorgeous =P~ =P~ .Well worth doing =D>
I still have fleeting flashbacks to the divine hoppiness of the drink
As for the refractometer, it still looks very nice.... sat in its box  as I still find it easier to use a hydro and sample tube(plus the said sample gets drunk down!! ).
