Because Sulphur compounds are released which may result in an off taste apparently.

I've not found that so far [-o< but may well mend my ways to avoid the possibility in the future.
I had the lid off for the boil at the weekend and nearly had a nephew fall into it; would this taint the final brew? :-k

ALso, leaving the lid off enhances the brewing smell and makes it very clear to the neighbours that you are brewing and, therefore, better than them.

That's what his daddy's for...and the lovely harness chair he (the baby, not my other half!) likes to watch me brew from after I've finished the "hot" bit with kits. I think he's going to be a brewer when he's older. He should probably start on ginger beer rather than, say, Headcracker though....

Given the various suggestions of me finding a friendly AG-brewer to try the whole thing out, I might well do that! For future reference, anyone know any tame, non-biting AG types in Edinburgh? ;-)
