Thoughts on this TC idea

Post by pauljmuk » Mon Jun 08, 2009 4:05 pm

Just started drinking my first TC - made 40 pints of it with Sainsburys AJ, about 900g demerara sugar, strong tea and Champagne Yeast. I started 3 litres off on hob, brought to boil, and then steeped 50g of elderflowers for 30 mins. The drink is lovely, and really wonderful elderflower aroma and taste.

I am planning on putting a second on, and have some orange blossom and rose petals. Am thinking about steeping those in the same way - I'm hoping this may add an interesting aroma to the cider. Anyone tried anything similar?

I remember reading an article by Paul Gunningham (a master cider drinker http://www.ciderandperry.co.uk/ ) and he suggested using a handful of rose petals picked on a warm summers day! It provided a natural bouquet I believe. This is a picture of him below;

I did real cider with rose petals and french oak chips and I learnt this:
Dont use too much
It takes months to smooth out the flavour
Is it worthwhile? Only if you have spare cider......
