Hi All
Just to introduce myself, this is my first kit and i hope someday to aspire to the heights of mashing etc. The guy I spoke to in the shop in Leyland was incredibly helpful but i am afraid i may have done some mthings incorrectly. The brew Wort is steady under the starirs at a constant 20 degrees (more by luck than judgement). I was worried because i did not rehydrate the packet ofm yeast but just sprinkled it over bthe top. It seems to be fermenting ie there is a froth on the top when i lift the top off. Is it ok to leave the top on tghe primary fermenting plastic bucket, the only reason i mask this is i have seen some with a bubbler. I added the powdered yeast to the extract (wort) at 26 degrees soi presumably this was sufficient to hydrate and activate the yeast. It has now been at 20 degrees for 48 hours. Will the yeast settle when finished at gthe bottom. I read that some need scraping off are thye only ntop fwermenting beers.

Next question can i add sugar instead of spratyed malt or do i not need to add anything.

I was told that i add geletine when im transferb the wort to the barrel, someone said after 2 days and somesaid dont bother.

welcome to the forum Bez,

sprinkling the yeast on the top is fine, I do this myself sometimes when I'm pushed for time. No probs there.

With the lid of the fermenter, snap it on all the way round then crack it off slightly in one place to let the CO2 out, a bubbler is not required, the lid is there just to stop dust, debris and insects getting in.

I would only skim the the brown crap off the yeast head with a sanitized spoon if there is loads of it, it's not essential.

You can add the gelatine when you transfer to the barrel, it should aid with clearing the beer. Dissolve the gelatine in some boiled water/beer, let it cool with a plate over the top then add it to the barrel with the rest of the beer.

You shouldn't need to add anything else to the fermenter, but you should prime your barrel with about 80g of sugar when filling it. Again, dissolve it in some boiled water/beer. Cool then add to the barrel.
