Hey Guys

One quick question. I really liked the last beer I made, which called for a little Corn Maize. I've since then, unfortunately, run out of the stuff. I'm trying to decide what I should use as a replacement.

I'm thinking corn flakes (literally, the cereal) or some corn kernels. I've never used either before. My grain bill for my next beer is at 5% adjuncts (flaked wheat) so I'm thinking if I use corn flakes (making the grain bill 10% adjuncts) I might run into some problems while sparging. I'm guessing the use of corn kernels would probably contribute to better sparging, however I'm not sure if corn kernels really add much to the beer.

Any thoughts?

Corn kernals have not been 'gelatinised' like flaked maize has, so will not be soluble at mash temps.

Corn flakes will probably work as long as you don't mind the other stuff they put in there, high fructose corn syrup etc.

You'll be alright sparging with 10% adjuncts, assuming you have a well designed mash tun
