Pedigree clown

Post by Cheshire-cheese » Wed Aug 05, 2009 12:26 pm

I've seen a couple of Pedigree recipes including extracts, syrups and sugars. I'd now like to clown around with the recipe to make an AG version:
4kg Pale Malt
400g Mild Malt
600g Crystal Malt
30g Goldings hops
75g Fuggles Hops
Mash 90 min
Boil 90 min, no late hops

Would this be too sweet to be remotely close to Pedigree?

Sorry, meant to add: 25 litre batch

Whilst waiting for comments, I searched on the net for anyother Prdigree recipes. Marston's website had a recipe to advertise their beer rather than encourage imitations. I was slighty put off their beer after reading the recipe though:
"...run the fermented beer into casks and add a little sugar, some whole hops and some Isinglas finings (made from the swim bladder of a sturgeon to Pedigree's own unique recipe) to help settle the beer, enhance the aroma... before you savour the unique taste of Pedigree... take a sniff of the uniquely complex aroma, backed by the unmistakeable 'snatch' of Burton water."

Does this fishing industry byproduct give beer an unmistakable snatch aroma? I'm not keen.
I note that, unlike some recipes I've read, they do dry hop.

I may have a crack at the brew, it'll probably be nothing like the original so I think calling it a pedigree clone would be misleading.
Perhaps I should dedicate the brew to a Chiropadist in Arkansas, Dr. Ben Marston, and call it Marston's Podiatry :-k

With explanitory footnotes, of course.

The finings are just normal isinglass finings such as are used by very many brewers.
