I have been taught that first runnings should be slow and that they should run down the side of the boiler in order to not splash and form bubbles. Iwas told that off tastes can come from this. This can be a problem at times .

Yet in pictures i see on the forum here i notice often that the first runnings fal ( from different levels) from the mash tun into the boiler. They must therefore spash and bubble.

So what is right, one other or does it not really matter?

From what I have read, its a myth and I wouldnt be bothered about it.

Some say slashing hot wort about causes HSA You can have a read up and see what you think. If it worries you running the wort through tubing into the bottom of your boiler minimises it in a similar to bottling or racking to a keg
