WB06 - conditioning time

Post by RichardG » Wed Sep 16, 2009 3:56 pm

Okay, I have a simple extract wheat beer conditioning in bottles at the moment. Recipe was 2 cans wheat extract, some crushed coriander, hallertauer hops and WB06 yeast, all to 19L. It's been in bottles coming up 2 weeks. OG was 1045, FG 1012, so a pleasent 4.2-ish%. Now normally my ales would be left at least 4 weeks before I touched them with that OG, but I have read that things are/can be different with wheat beers. So, can I ask for forum members opinions? Firstly, should this be drunk young, and if so, how young? Secondly, on pouring should I be swirling the yeast back into suspension, leaving it in the bottles, or is that a matter of personal taste? Any & all views most gratefully received.

Drink it as soon as it carbonates, this one doesn't improve with time.

The yeast is personal taste, I like a small amount but not the whole lot at the bottom of the bottle. If you can see the yeast clinging to the side of the glass and leaving a trail as you drink it, you've probably added too much.

Many thanks mysterio, this weekend it is then; I'll also be somewhat careful in pouring. Cheers!
