Final Gravity for Safale 04 high?

Post by skipper » Fri Oct 16, 2009 5:00 pm

I brewed an ale with 2.25kg spraymalt and 350g Crystal malt + progress/east kent goldings hops.

Started it last Sunday after pitching Safale 04. The OG was 1.045. Temp 22c. It was fermenting within 5 hours and all visual signs of fermentation stopped on 14th, so three days. Checked with hydrometer today (day five) and the FG is 1.014. This is about 67% attenuation. Does the FG seem a little high? I'll check again on Sunday and if its the same bottle it but if it is high - what can I do in future to get it lower? or am i stuck with what the yeast feel like doing?!

thanks

That's not too bad, fermentability of the extract plays a big role too. You could do a mini-mash along with the extract next time to get it to ferment further, or use a more attenuative yeast like Nottingham, or use a little table sugar in place of the malt (1 or 2 %)

S-04 often goes like the clappers to start with then slows down although I'd have expected it to be a point or two lower than that by day 5. Maybe your sachet was a bit old. Give a few more days and it should do its work.
Best wishes
