Flavouring Extract Brews (not with hops!)

Don't panic - I am using hops too!

I know there's a few threads on here already about adding various flavours, such as elderflower, to brews but I thought I'd ask again as I'm not having much luck introducing flavours to my extract brews.

I tried a 2.5gal of light summer ale to which I added 15g dried elderflower to "steep" (for 15 mins) in the water used to make up the wort. The malt flavour dominates however, barely noticing the elderflower at all.

Then I tried to add coriander to another 2.5gal batch based this recipe http://www.brewuk.co.uk/store/index.php ... summer-ale.

It suggests using 2 tsp coriander seed, presumably for a 5gal batch. I used 1 tsp (for 2.5gal) and brought it to the boil in the water used for the wort. It was probably in there for around 30mins in total.

Again, all I can detect is malt. I used whole seeds and ground them with a pestle & morter to try and get the most flavour possible.
The only sucsessful flavour I've managed to add to a beer was ginger - using 40g of bruised root ginger (in a muslin bag) in 2.5gal. Was pretty nice, like Blanford Fly.

Anyone else experimented with these flavours (not the ginger :wink: )? If so, what quantities/methods have worked for you.

Also, getting a heavier, winter brew on the go. Any suggestions for some unique flavouring to add to a small batch of this?

My elderflower ale turned out fantastic! I boiled 35g for the last 15 mins then crash cooled. This was allgrain but shouldn't make a difference.

Was that fresh or dried elderflower? and in what brew length?

Original Gravity: 1.040 (1.038 - 1.054)
Terminal Gravity: 1.008 (1.008 - 1.013)
Color: 3.67 (3.0 - 6.0)
Alcohol: 4.13% (3.8% - 5.5%)
Bitterness: 27.0 (15.0 - 28.0)

Ingredients:
4.0 kg English 2-row Pale
500.0 g Cara-Pils
20.0 g First Gold (9%) - added during boil, boiled 90 min
35.0 g Elder Flowers - Dried - added during boil, boiled 15 min
25.0 g First Gold (9%) - added during boil, boiled 10 min
1L Hen's Tooth yeast starter

If you are interested in brewing with herbs and such then I highly recommend that you read the book:

Sacred and Herbal Healing Beers: The Secrets of Ancient Fermentation

I find it to be a great read and chock full of interesting recipes, it will really branch you out into many different sorts of beers. Check it out on Amazon, the price is decent, and I am glad to have it in my brewing library.

That's a fair bit more elderflower than I used in the same brew length, so will up the quantity to 35g without fear for the next batch... although I fear the next "summer" brew will be a fair way off now :(

I've had the Sacred and Herbal Healing Beers book delivered today from Amazon. Some very interesting brews in there. Not sure that my friends would be too keen on drinking beer that I've made from chewing balls of tapioca but I won't tell them !

Great recomend 6470zzy. Going to have some fun with this.
