Elderflower Champagne

I prefer to use a hard setting champagne yeast (like most of the cider brewers use, but pretend they don't use) and not to carb to highly.... ok its sparkling rather than fizzy, but the sediment sits tight, and I prefer it to some of these modern monstrosities that are more gas than taste.

I find champagne yeast leaves a wispy sediment that clouds when the bottle is opened, which brands are hard setting?

Its a commercial strain that a cider brewing friend of a friend uses. I'll find out exact details and report back.

According to him most of the cider breweries use it, but only a handfull would admit to it. I guess its bad for their rustic image.

hi, i've made some elderflower champagne which has been left in 750ml pet bottles for a couple of months. i tried it yesterday and there was hardly any fizz, it was more like elderflower wine. how can i rescue it? just add more brewing sugar to each bottle...?
