If you are going to bottle you will need to leave it a bit to mature but if you are going to stick it a keg then I think you are good to go with this particular recipe.

Phil I also have great memories of drinking Hefe whilst in Aachen.
I also remember being given a standing ovation one evening, whilst drinking outside one of the bars that was around the old ampitheatre. The legs on the whicker chair I was sitting on gave way and I tumbled backwards down the steps into the bottom of the ampitheatre. The Germans found it highly amusing
