That looks good actually. Brewing a Belgian for my next brew and may give this a go. As for extract, I'm not sure how you'd do it. Suppose you could steep the speciality grains perhaps? A LOT of the flavour comes from the yeast in these brews. I highly recommend White Labs WLP500. In order to get the fruity notes from the yeast you'll have to ferment at around 21c-23c as well. Might be an issue with this weather but an aquarium heater can do the trick.

Thanks Floyd looks like I will have to get my arse in gear and make the equipment I have in the garage for going AG!
